2015 HellHound Red Blend

Our 2015 HellHound Red Blend is dark and rich in flavor - it is unmistakably a big, bold red wine made from Cabernet Sauvignon and Cabernet Franc.  Cabernet Sauvignon contributes plush ripe tannins and deep, dark fruit character.  Cabernet Franc provides savory flavors and mouthwatering acidity.  The two grapes combined produce an exceptional red wine.

Cabernet Sauvignon.  Brenda first purchased Cabernet Sauvignon grapes from Ed and Bruce Perotti, father and son grape growers in Dry Creek Valley, in 2002.  Home to our flagship Zinfandel fruit, the Perotti's planted a small plot of Cabernet Sauvignon on a hillside section of their vineyard.  When the first grapes arrived in 2002, they offered them to Brenda and she has been making the wine ever since.  On its own, the Cabernet Sauvignon was a very, very good wine - big, bold flavors and plush tannins.  But for Brenda, something was missing.   In 2012, she started to blend in other varietals with the Cabernet Sauvignon and her Hellhound Red Blend was born!  HellHound is always big and bold Cabernet Sauvignon with other grapes blended in that contribute complexity and texture.  For Brenda, the other grapes make the wine whole.

Brenda's Winemaking.  Hellhound gives me the ability each and every year to make a big and bold style red wine based on Cabernet Sauvignon.  In 2015, I was able to secure Cabernet Franc from the Frediani Vineyard in Napa Valley and I co-fermented (in the same fermentation tank) the two grapes together.  It was love at first sight!  The Cabernet Franc added flavors and acidity that complemented my Cabernet Sauvignon.  The wine went straight into used French oak for barrel aging and softening before bottling.  HellHound is meant to be BIG AND BOLD... hopefully I've succeeded with the 2015 vintage.

Wine Profile
Tasting Notes
HellHound is by far our deepest, darkest red wine. Intense in aroma and flavor, it is full-bodied and mouth-filling in character. Black berry fruit, hints of herbs typical of Cabernet Sauvignon, a touch of savory flavor from Cabernet Franc, plush and ripe tannins in the finish. BIG AND BOLD!

Food Pairing Notes
Hellhound begs for grilled red meat. Picture a bone in ribeye steak with an ancho chile - coffee spice rub.
